Blueberry Muffins

Today I will  share with you a Blueberry Muffin recipe that I use. Optional ingredients are orange juice, lemon juice, orange zest or lemon zest.  I would add no more than 1 teaspoon of any of these ingredients to this recipe. I also sometime put sugar on top before baking.

Blueberry Muffins

1/2 cup butter

2 eggs

2/3 cup sugar

2 teaspoon baking powderBlueberry muffins

1/2 cup milk

1 teaspoon vanilla

1/2 teaspoon salt

2 1/2 cups blueberries

2 cups flour

 

Cream butter and sugar until fluffy, add eggs, one at a time and mix until well blended. Shift dry ingredients and add alternately with milk. Add blueberries. If using frozen blueberries DO NOT THAW. Mix this batter by hand. Bake at 375 degrees for 30 minutes. Yield: 12 large muffins.
