Lemony Hearts of Palm Salad
One year for Christmas I found Hearts of Palm in a jar at the local grocery store. I thought they would make a great joke gift for Earl. I bought a jar and put them in his sock. On Christmas eve when we did our socks he seemed happier then I was expending. He asked me where I had found them, when I told him he said great that he had found a recipe that he wanted to try and if we liked it we could add this to our favorites. We did like this salad it is real easy to make and it is part of our Valentine menu this year. So now we have a salad and dessert for Valentine’s dinner. We are still disusing the rest of the menu.
Lemony Hearts of Palm Salad Total Time: 20 min Prep: 20 min Yield: 4 servings Level: Easy Directions Soak 1/4 cup sliced red onion in cold water, 10 minutes; drain. Toss with 2 cups sliced hearts of palm 1 cup sliced celery and some chopped parsley. Add 3 tablespoons each lemon juice and olive oil. Season with salt and pepper.
