Fruit Cobbler

Today as I was looking for something to bake I saw that I had a lot of fruit on hand. I decide to make a cobbler of sorts.


2 plums

2 nectarines

2 Granny smith apples

2 oranges

1 ½ cups sugar

¼ cup flour

1 teaspoon each of cinnamon and nutmeg

Peel and cut the plums, nectarines and apples. Place them into a Dutch oven. Add the juice of 2 oranges, sugar, flour, cinnamon and nutmeg. Cook until the apples are soft. If the sauces is not as thick as you would like mix a little corn starch with cold water and add to the fruit a little at a time. Bring to a boil for 1 minute, continue until you get the thickness you desire.

For the topping

½ cup shorting

2 cups all-purpose flour

1 tablespoon sugar

3 teaspoons baking powder

1 teaspoon salt

1/3 cup heavy cream

2/3 cup milk

Heat oven to 450 degrees.

Combine dry ingredients, cut in shorting with pastry blender or crisscrossing 2 knives until mixture looks like fine crumbs. Stir in cream and milk until thoroughly mixed.

Pour fruit mixture into a 6x10x2 inch glass baking dish, spread topping thinly over fruit mixture (I put the dough on by hand). Bake for 10 to 12 minutes.
