Lo Mein

Lo Mein

This is a recipe that we have used a lot and made to fit our taste. You can make it spicy or mild whatever your taste, just adjust the amount of chilies that you use. If you do not have chilies on hand we have used crushed red pepper flakes with good results. We have also used frozen stir fry vegetables with good results. If you or a family member dislikes one of the vegetables you can omit it and add something that everyone likes.

1 pound of angel hair pasta

3 tablespoons olive oil

1 tablespoon rice wine vinegar

2/3 cup Tamari separated

1 tablespoon fish sauce

½ teaspoon sesame seed oil

2 broccoli flowerets chopped

1 red bell pepper chopped

1 onion chopped

8 ounce mushrooms sliced

4 cloves garlic minced

1 ½ tablespoons fresh ginger

6 ounces snap peas sliced

3 Fresno chills diced

2 stalks celery chopped

2 medium carrot chopped

2 scallions chopped

While you heat water to cook the pasta, start cooking the vegetables

In a large pan sauté broccoli, garlic and chili peppers for 5 minutes then add bell pepper, onion, carrots and celery cooking 5 minutes longer. Add ginger, fish sauce, sesame seed oil, snow peas, mushrooms and 1/3 cup of the Tamari. Cook about 5 minutes more then add rice wine vinegar. Cook the pasta according to package directions. When the pasta is cooked to your liking, drain and add to the vegetable, add the last 1/3 cup of the Tamari. Mix well to combine Serve hot. This is also very good the next day.
