Cottage Cheese Salad

Today would be my Mother’s birthday she would have been 79 years of age. In her honor I would like to share one of the recipes that that she would always make and every time she made this salad she would have me write down the recipe for her. I always found this funny as it was a salad that she had made as long as I can remember. This salad is so easy and delicious that mom would make it for us all the time, when we were kids and even after we were grown.

Ingredients:

1- 16 ounce tub cottage cheese

1- 8 ounce tub whipped topping

1- 8 ounce can mandarin oranges

1- 8 ounce can crushed pineapple

1 envelope of orange flavored jello

Directions:

Dump cottage cheese and whipped topping into a bowl. Drain oranges and pineapple and add to cottage cheese then add jello.  Fold together ingredients. Chill and serve cold.

This salad is made traditionally with orange jello but we have used whatever flavor we needed to for the color we wanted. In the family we still argue over rather this is a side dish to serve with the meal or is it dessert.
