Ziti with Asparagus

For dinner the other night we thought that we would make up a pasta recipe. Of course for us this was a weekend recipe as we had to go shopping to get some of the ingredients and we shop at the end of the week. This dish was delicious. After we ate we talked about trying it with a bit of cream at the end just for a different take on the same dish.


1 pound of ziti

1 /4 cup + 3 tablespoons of olive oil divided

4 cloves garlic

1 pound of asparagus cut into thirds

8 ounces of prosciutto cut into cubes (we bought one 8 ounce piece)

Juice of 1 1 /2 lemon

Zest of 1 lemon

3 green onions

Shaved parmesan cheese and chopped parsley for garnish


Cook ziti as direction on the package. While the ziti is cooking over medium heat place 3 tablespoons of olive oil into a large sauté pan. Sauté the prosciutto, add garlic and asparagus. When asparagus is just al dente add the green onions, lemon juice and zest. When pasta is cooked drain and add to sauté pan stir to combine. Serve garnished with some shaved parmesan cheese and parsley.
