Earl’s Taco’s

Whenever we make the Kalua pork that we so enjoy their is always leftover pork. We freeze the pork and a couple of days or a week later Earl makes these taco. They are so good and a great way to use up the leftover pork.

Earl’s Taco’s

Pork tacos

1 ½ pound pulled pork

4 chipotles chopped with adobo sauce

1 ½ cups water 2 tablespoons cumin

3 tablespoons chili powder

1 teaspoon cayenne

3 teaspoons oregano

1 teaspoon garlic powder

1 teaspoon ancho chili powder

1 teaspoon honey

1 tablespoon paprika

In a large pan add pork, water, and chipotle’s bring to a simmer. In a bowl add dried spices and add to simmering pan about 20 minute or until thick.  Add honey and stir.

Make a crème

½ cup sour cream

2 teaspoons lime juice

½ teaspoon lime zest Let set at least 1 hour

Pico de Gallo

2 tomatoes chopped

½ small onion chopped

1 habanero chopped

1 teaspoon cilantro chopped

juice of ½ lime

Mix well and let set at least 1 hour

Serve with corn tortillas, crème, Pico de Gallo and chopped cilantro.
