Cottage cheese and blueberry bars with oat crust

This week I have been staying and baking at my friends’ house as all of my belongings and baking tools have been packed and are already on their way to Catalonia.

Lack of blender, mixer and scales forced me to create something that is very easy to prepare and does not require many tools. These absolutely delicious breakfasty bars are the result. You will only need the ingredients, an oven, a bowl, a spoon and a baking tray to prepare it.

Every day deserves to begin with a slice of cheesecake, so here you go…

COTTAGE CHEESE AND BLUEBERRY BARS WITH OAT CRUST

Ingredients

Crust
3 cups rolled oats
1/2 teaspoon salt
1/2 cup all purpose flour
170g butter, melted
2/3 cup sugar

Topping
600g cottage cheese
1/3 cup plain yogurt
1/2 cup all purpose flour
1/3 cup sugar
1 teaspoon cornstarch
grated peel of 1 lemon
150g blueberries
